The Original Bacon and Rice Recipe

When I was a wee boy, I battled the demands of motherly cuisine and sought simplicity in my diet. The raging waters that fell from my nanay’s cheeks as I repeated,

“Give me bacon, or give me death.”

Raw grains of rice fell to the ground as I clenched my fists like an angered aardvark.

My mother knew what I wanted. The sweet caramelization of a thick slice of bacon that’s been hand crumbled atop a steaming bowl of jasmine rice with lush spring onions.

A swift meal meant for breakfast that has served its presence amidst many other hours of the day. 

This is it,” said my mother as she placed the bowl in front of me.

Those were her last words before she abandoned me and my younger sister. As much as I craved the godly meal that she created so many times at my childish demand, I had come to realize that I had forgotten to say the phrase that might have prevented her absence:

“Thank you.”

After thousands of attempts, I’ve finally replicated this godly meal. 

Several decades later, these are the words that I now say to my younger sister after she compliments the bowl of bacon and rice that I’ve tried to recreate in my mother’s stead.

The Original Bacon and Rice Recipe

The original recipe that started it all, whipped up by my now absent mother's hands.

  • 1 Pressure cooker Rice cooker preferably
  • 1 Pan
  • 1 Bowl


  • 3 slices thick cut bacon
  • 2 cups jasmine rice
  • 1 tbsp spring onion chopped


  • Cook the bacon.
  • Cook the rice.
  • Put rice into a bowl.
  • Use your hands to crumble bacon on top of the rice in the bowl.
  • Cut spring onion and sprinkle over the bowl.
